Tokyo's Kappabashi Dori is a street dedicated to kitchen ware, primarily aimed at the restaurant trade. You can get everything you could possibly imagine is needed to run a restaurant or café here and some items you may not have thought of. This is a great chance to pick up some Japanese chefs knives - undoubtedly the best in the world.
Alternatively head to Tsukiji outer market where you will find two of the most famous names in Japanese chef's knives, Aritsugu and Sugimoto. Both makers have stores in the market where you can purchase any type of kitchen knife you can imagine from general multi-purpose every day knives to knives designed for boning specific types of fish.
