A hands-on cookery class in a ryokan kitchen

Meet Nishimoto-san, a young yet very talented chef. He's part of the team in a top quality kitchen serving kaiseki cuisine using local ingredients and menus created monthly to reflect the changing of the seasons. With your guide in attendance to translate and provide interpretation for your questions, Nishiyama-san will teach you the core tenets of preparing sushi, including his fantastic knife skills which he uses to prepare both fish and vegetables. You will learn how to prepare sushi like a master - including nigiri, makizushi, temaki zushi and miso soup for a fantastic lunch which you can eat with the chef and proprietress.
